1. Energy Soup: the vegetable soup that makes you lose weight

Ingredients for 4 people

  • 1 liter of vegetable broth
  • 5 carrots
  • 2 stalks of celery
  • 1 white leek
  • 2 oranges
  • 1 piece of ginger about 2 cm
  • 15 g of turmeric powder
  • 15 g of almonds
  • Olive oil
  • Salt and pepper

Preparation

  1. Peel and cut the carrots into pieces. Clean the white of the leek and the stalks of celery. Remove the rootlets at the end of the white leek. Finely chop it. Cut the celery stalks into chunks. Peel the oranges then chop them coarsely. Peel and finely chop the piece of ginger.
  2. Brown the leek egg white, chopped carrot and celery, ginger and turmeric in a saucepan with a drizzle of olive oil. Add the pieces of orange. Salt and pepper to your liking. Wet with the vegetable broth.
  3. Cook for 45 minutes over medium heat, almost covered. Add the almonds.
  4. Mix the preparation until the desired consistency is obtained. If the soup seems too liquid, do not hesitate to cook it for a few more minutes over medium heat and uncovered so that it reduces a little. Conversely, if it seems too thick, add a little water.

2. Red cabbage soup with cider vinegar: to eat in the evening to lose weight

Ingredients for 4 people

  • 75 cl of chicken broth
  • 400 g of red cabbage in bag (pre-cut)
  • 1 medium-sized potato
  • 25 cl of cider vinegar
  • 2 shallots
  • Olive oil
  • Salt and pepper

Preparation

  1. Peel and cut the potato in pieces. Clean the shallots then chop them finely.
  2. Fry the shallots in a pan with a drizzle of olive oil. Add the red cabbage. Deglaze with apple cider vinegar and fry for a few minutes. Add the potato pieces. Salt and pepper to your liking. Sprinkle with the chicken broth.
  3. Done cook for 45 minutes over medium heat and almost covered (just moving the lid of the saucepan to leave a very small opening). Blend until you get the desired consistency. This soup should be eaten quickly because the cabbage can tend to ferment after a few days.

3. My mom’s soup: with spinach, leek and celery, ingredients that help you lose weight

Ingredients for 4 people

  • 1 liter of almond milk
  • 1 courgette
  • 2 tomatoes
  • 50 g of spinach
  • ½ red pepper
  • 1 white leek
  • 1 stalk of celery (with leaves)
  • 2 cloves of garlic
  • 1 bouquet garni (thyme, bay leaf, rosemary)
  • 1 chicken cube
  • Olive oil
  • Salt and pepper

Preparation

  1. Rinse all the vegetables with water. Remove the rootlets at the end of the white leek and slice it finely. Cut the celery stalk into chunks and coarsely chop the leaves. Cut the courgettes into small pieces. Remove the stems from the tomatoes and peppers. Peel them and cut them into medium-sized pieces. Clean the garlic cloves, remove the germ and mash them.
  2. Done brown the leek and garlic in a saucepan with a drizzle of olive oil. Add the celery, courgettes, tomatoes, bell pepper, spinach and the garnished bouquet. Salt and pepper to your liking. Wet with almond milk. Add the chicken cube.
  3. Cook for 45 minutes over medium heat, almost covered.
  4. Remove the bouquet and mix the preparation until the desired consistency is obtained.
