The recipe of the chorba

Among all the traditional Algerian recipes, we find the chorba. This soup recipe it is made with meat, usually lamb or beef, but also with wheat or vermicelli. Lamb chorba recipe

For 4 people
50 minutes of preparation

250 g of lamb fillets
200 g of chickpeas
100 g Spaghetti al Combino (vermicelli)
2 yellow onions
2 carrots
2 celery
3 cloves of garlic
1 green chilli
1 jar of tomato puree
1 C. c. Kania ground turmeric
1 C. c. paprika Kania
2 tbsp. c. Cumin of Kania
1 C. c. ground ginger
1 garnished bouquet
coriander
Parsley
Olive oil
fine salt
Black pepper from Kania

Coarsely chop the lamb. Peel and wash the vegetables, then cut them into brunoise.

Clean and finely chop the garlic and onion.

Chop the pepper, taking care to remove the seeds.

In a saucepan pour a drizzle of olive oil and heat over medium heat. Add garlic and onions.

Add the rest of the vegetables and the lamb. Cook for a few minutes until the meat is caramelized and the vegetables are browned.

Pour in the tomato paste and 1.5 liters of water and bring everything to a boil.

Chop a few sprigs of cilantro and parsley. Add the aromatic herbs to the mixture, taking care to keep some aside for the final dressing.

Cover and simmer for 10 minutes to complete the dish.

When the vegetables are just crunchy, add the Chickpeas drained, vermicelli and spices. Let it simmer another 5 minutes.

Sprinkle with fresh herbs and serve hot.
