The recipe for the vegetable soup and rocket cream

Ingredients for 4 people

3 shallots, chopped

150 g of potatoes

1 large carrot, diced

1 white leek

1 celery stalk, chopped

1 minced clove of garlic

1 peeled apple, coarsely chopped

Butter

10 cl of beer

40 cl light vegetable broth

1 bay leaf

20 cl of liquid cream

3 tablespoons of chopped rocket

salt

Make it come back shallot, white leek, celery, carrot, garlic and potatoes in a little butter.

Deposit the beer, add the apple and bay leaf and bring to the boil.

Wet broth, lower the heat and simmer for about 30 minutes, covered.

Mix the soup and seasoning.

Climb whipped cream with a pinch of salt and gently add the rocket.

Dressage

Spread the soup on each plate, sprinkle with Espelette pepper and garnish with a quenelle of rocket.
