Red Curry Noodle Soup looks delicious and healthy, as it carries several essential nutrients our body needs. It is made with rice noodles, vegetables, and stir-fried tofu.

“Super easy to make, full of flavor and satisfying enough for a meal,” added Lovneet. Grab a pot of this nutritious soup to add flavor to your eating habits. Here is the recipe:

– Pour the coconut oil into a large saucepan over medium-high heat. When the oil is hot, add the tofu. Let it rest for as long as possible and mix only after a few minutes. Heat until lightly browned and crisp on all sides.

– In a large saucepan, over high heat, add the oil, garlic and ginger. Cook for 2 minutes.

– Add the chopped vegetables and the red curry paste. Cook for another minute.

– Add the coconut milk, vegetable broth and salt to taste. Partially cover and simmer for 5 minutes.

– Finally, add the noodles and simmer for another 3 minutes.

– Add the tofu and the desired garnish. To serve.
